Skillet Tex Mex Corn and Bean Salsa


















Fresh and spicy Tex Mex can be diet friendly and you don't have to settle for Taco Bell's version of healthy south of the border. Try this fast and easy recipe in your own kitchen for fabulous fast food that won't break your budget or expand your waist line.

To go low carb, replace corn and black beans with cooked ground beef and chorizo. Other delicious options are as simple as substituting sharp cheddar cheese for Pepper Jack cheese. Or substitute your favorite fresh salsa for the picante sauce. If you like it spicy, add a half teaspoon of ground cayenne pepper or ground chilpolte pepper.

I love my job! But we're having a dysfunctional relationship at the moment















Okay, I'm a patient person. NOT. I love my job at a major online website and I would never leave willingly. The writing and publishing opportunity they offer me is worth any aggravation.

My impatience stems from this email statement: "we’ve made several observations about the migration of content..." Yeah, like in stuff has disappeared into thin air. Stuff I didn't always back up or lost to a willfully suicidal hard drive.

I hope I've learned my lesson. ALWAYS back up everything! Then back up the back ups. And never rely on a laptop.
